This cookie has a texture like a shortbread but is really creamy and has sort of a cheesecake after taste because of the cream cheese. i made about 2 dozens or so and it was gone in a day. My family loved these cookies and i think this recipe will stay for a long time!

Ingredients:

for shortbread cookie

1&3/4 cup flour

1/2 cup cornstarch

1/4 tsp salt

2 tsp cinnamon (maybe a pinch more!)

3/4 cup butter (1&1/2 stick)

4 oz. cream cheese

1/2 cup brown sugar

1&1/2 tsp vanilla

for cinnamon sugar sprinkle on top

4 tbsp brown sugar

1&1/2 tsp cinnamonn

<img border="0" height="200px" i$="true" src="http://1.bp.blogspot.com/-eq7S2-uZbTY/Tg_myD3cBxI/AAAAAAAAAB0/0_xS4vf11Ns/s200/cinnamon.jpg" width="161px" />

Directions:

cream butter, creamcheese, and sugar well.

add vanilla

in a separate bowl, stir flour, cornstarch, salt, and cinnamon together

add dry to wet ingredients.

mix well and place dough in a plastic wrap. Everyone loves mochi, whether it's filled with beans, cream, or jelly. Today i made red bean filled mochi because it is my grandmother's birthday and i wanted to make her something simple but delicious. Making these mochi was super simple with the little ingredients required. Cleaning up was the hardest part but the trouble was worth it!

I used Mochiko (sweet rice flour) and can of red bean paste (find them at asian supermarkets). This requires a microwave and a heat proof bowl.
